Fixin “En Coton”

“The gem” of the Côte de Nuits, set on the slope that separates the limestone plateaus of the Hautes-Côtes from the Bresse plain.

Fixin

The terroir

Parcel

Between Dijon and Gevrey-Chambertin. Set on the slope that separates the limestone plateaus of the Hautes-Côtes from the Bresse plain, the vineyard lies on a clay-limestone soil enriched with marl. Planted at the foot of the slope, the vines can be up to around fifty years old. Facing east and south-east, they benefit from steady ripening of the grapes.

Grape variety

Pinot Noir

Our know-how

From vineyard to cellar

Winemaking

Hand-harvested; 50% of the bunches are destemmed and 50% kept as whole clusters. They are then placed in stainless steel tanks for vinification. The wine is aged in new barrels and 228-liter barrels that have already held one (white) wine, for at least 12 months.

Tasting advice

The experience

Sensory expression

Tasting notes

On the nose, great freshness with notes of lilac and strawberry jam. Structured like its great neighbors, with persistent tannins.

Food matches

Food pairings

A fine rib of beef with a sprinkle of fleur de sel. Tandoori or curry. More creative pairings such as paella or spring rolls. Perfectly balanced with a Chaource or a fruity Comté.
