Our know-how
From vineyard to cellar
Winemaking
Hand-harvested. Grapes sorted bunch by bunch, slow fermentation with indigenous yeasts. Aged for 15 months in a ceramic egg, then 6 months in bottle. The egg allows gentle oxygenation, revealing purity of fruit, minerality and natural roundness.
