Our know-how

From vineyard to cellar

Winemaking

Hand-harvested, with sorting to keep only healthy bunches. Gentle, rapid pressing after harvest to extract the juice without bitterness. Alcoholic fermentation with indigenous yeasts in stainless steel tanks. Aged for 17 months in a ceramic egg, where natural bâtonnage brings complexity and minerality.

The experience

Sensory expression

Tasting notes

An expressive, elegant nose, with the natural richness of Chardonnay and aromas of white flowers (hawthorn, honeysuckle), Granny Smith apple and yellow peach. A frank attack, a burst of freshness with citrus notes and a finish on almond. Fine balance between the richness of the Chardonnay and the minerality brought by aging in egg.

Food matches

Food pairings

Fennel and pine nut salad, pan-seared scallops, asparagus risotto. Cheeses: fresh goat’s cheese, Beaufort or young Comté.
